It was in this auspicious year that Ruse’s grand Islah Hane hotel became the birthplace of a mouthwatering masterpiece of cakecraft. Criminally underappreciated outside its homeland, this unifying dessert features alternating walnut-meringue and rich chocolate cream layers, drowned in a delicious dark chocolate ganache and garnished with finely chopped pistachios.
